Emma’s Story

Chef Emma Legault, daughter of Seth and Nikki Poole and wife to Jacob Legault, grew up right here on Lake Burton, where her love for cooking first sparked in her grandmother Susy’s kitchen. Those early memories — standing on a stool, helping stir pots, learning family recipes — ignited a passion that would shape her entire life.

Emma earned her four-year degree in Hospitality and Communications, which led her to roles at the charming Beechwood Inn and the renowned Grand Bohemian Hotel in Asheville, North Carolina. Immersed in the hospitality world, she quickly discovered that her heart was most alive in the kitchen. Determined to pursue the craft fully, she enrolled in the competitive AB Tech Culinary Arts Program, a program nationally recognized for its excellence and frequent appearances at culinary nationals.

At AB, Emma trained for countless long days and nights alongside some of the region’s most talented chefs, shaping her technique, discipline, and culinary identity. After graduating, she returned home to Lake Burton to plant deeper roots in the community that raised her.

In the summers, Emma continued to operate Take It on the Lake, and during the off-season, she became a sought-after Private Chef for local families and longtime Lake Burton residents. As her reputation grew, so did her following. While the vision for Restaurant 1967 took shape, Emma poured her energy into sharing her dishes, her story, and her excitement with the community.

Today, Emma feels incredibly grateful for the outpouring of support from family, friends, and neighbors. Opening 1967 is the fulfillment of years of hard work, mentorship, and love, and she cannot wait to welcome guests into a space where her passion comes alive on every plate.
